Place the oil in a large, heavy skillet over medium heat. Meanwhile, in a small bowl, combine the chives, thyme, garlic, paprika, and black pepper. Rub on both sides of the pork chops. Add the pork to the hot skillet, and cook for 5 minutes on each side. Serve warm.
STORAGE NOTE: These pork chops freeze beautifully. Use within 2 months for the best quality. For easy servings, individually wrap the leftovers in aluminum foil and place in a freezer-quality zip-top bag. Then you can pull the appropriate number from the freezer as needed. Refrigerated leftovers should be used within 4 days.
